Cà rốt gọt bỏ vỏ, bào sợi hơi to. Ngâm cà rốt vào thau nước vôi trong có pha thêm 1 muỗng cà phê muối, để qua đêm. Sau đó rửa cà rốt qua nước lạnh nhiều lần cho thật sạch. Để trong rổ cho ráo nước.
Vỏ cam gọt lấy phần vỏ thái sợi. Cho cà rốt, vỏ cam, 300g đường, 100ml nước lạnh vào chảo không dính trộn đều. Để 30 phút cho đường tan.
Cho chảo cà rốt lên bếp sên lửa vừa, khi nước sôi 5 phút thì hạ lửa hơi thấp tiếp tục sên và thường xuyên đảo nhẹ để tất cả thấm đường đều. Khi nước đường bắt đầu cạn thì để lửa thật nhỏ, sên tiếp cho đến khi đường kết tinh khô ráo là tắt bếp.
Chờ mứt nguội thì có thể đem bảo quản kín để dùng dần.
