Thịt chân giò, da heo mua về cạo sạch lông ở da, rửa sạch rồi thái miếng vừa ăn. Ướp thịt với 1 muỗng canh hạt nêm, 1 muỗng canh nước mắm, 1 muỗng muối, 1/3 chỗ hành tím băm khoảng 25-30 phút.
Dùng 1/3 chỗ hành tím băm phi thơm với dầu ăn. Cho thịt vào xào đến khi thịt hơi săn lại.
Đổ nước ngập mặt thịt, dùng cả phần nước ngâm nấm gạn bỏ cặn cho vào cùng, đun sôi rồi hớt bọt, hầm trong khoảng 30-40 phút đến khi thịt chín mềm. Trong quá trình hầm nếu vẫn có bọt thì cứ tiếp tục hớt đến khi hết bọt thì thôi.
Dùng chỗ hành tím băm còn lại tiếp tục phi thơm với 1 chút dầu ăn. Cho nấm hương và nấm mèo vào xào săn, nêm muối, hạt nêm cho vừa miệng. Đến khi thịt gần được thì cho nấm và mộc nhĩ vào, đun sôi thêm 3-5 phút nữa thì tắt bếp, rắc hạt tiêu vào đảo đều.
Rắc hạt tiêu và cà rốt, hoặc rau mùi xuống đáy bát để trang trí. Chờ thịt nguội bớt thì múc vào bát, để vào ngăn mát tủ lạnh. Khi ăn dùng dao sắc khoét vòng quanh bát rồi úp thịt ra đĩa. Món thịt đông cho ngày Tết đã hoàn thành.
